Rally Refuel Series: Peanut Butter Udon Noodles

You got the workout in, now it’s time to refuel and keep the day moving. This Peanut Butter Udon Noodle recipe with crispy tofu is quick to pull together, packed with great flavour, and built to keep you going.

What You’ll Need (Serves 2–3)

  1. Crack a Rally Ultra Light and take a sip! 
  2. done). Crumble or chop into bite-sized pieces.
  3. Whisk together Peanut butter, soy sauce, maple, vinegar/lime, sesame oil, garlic, cornstarch & water. Smooth it out. Add heat if you’re into it.
  4. Heat oil in a pan, toss in tofu, and cook until edges are golden and a little crispy (about 7 mins).
  5. Boil water, add Udon noodles, stir ‘til loosened (about 1 min). Drain.
  6. Pour the sauce over the tofu, then stir to coat. Add a splash more water if needed, aim for silky, not sticky.
  7. Build your bowl, add noodles and tofu on top, and finish with all the goods. Load it up.
